Many people are not very well aware of health benefits that fish can offer. Fish is a low fat food that offers plenty of minerals, proteins and vitamins. It also includes Omega 3 fatty acid. This is an important fatty acid that helps in fighting heart disease when combined with healthy diet. Many health professionals in fact suggest eating fish two times in a week. Poached Citrus Salmon

Ingredients: 1qt chicken stock, 1qt orange juice, 2 cups white wine, 2 ½ lbs skinless salmon fillet, 2 cups chopped lemon grass, 1 tsp white pepper, 1 tsp salt, 2tbsp minced garlic, 1 small yellow onion

Directions: Halve the salmon into equal portions. In a big sauce pan, pour white wine, orange juice and chicken stock, add garlic and lemon grass. Combine the ingredients well, add white pepper and salt. Bring this mixture to boil for about five to six minutes, reduce he heat and let it boil. Put salmon into the mixture and allow it to cook for sometime or until it gets flaky and tender.

Baked Cod

Ingredients: 2 cod fillets, 1 tbsp minced parsley, 1 cup seasoned and crushed croutons, 1 tbsp ranch salad dressing, and butter flavored spray.

Directions: Mix together crushed croutons and minced parsley in a bowl. Brush the cod with ranch dressing, roll it in the mixture of crouton. Spray the flavored spray, put into 11×7 inch greased pan. Bake for ten to fifteen minutes at 400 degrees F, or until it becomes flaky.

Fish Cakes

Ingredients: 1medium onion, 1 tbsp creamy mayonnaise, 1 lb catfish fillets, 1 tsp yellow mustard, ½ tsp old bay seasoning, 1 egg, 1 cup oil, 2 ½ cups crushed crackers.

Directions: Place the catfish into a sauce pan and combine plenty of water to cover the fish. Let the water to come to a boil and let it cook until it is done. It should peel well with a fork. Drain the water and mash the fish with the masher or fork. Combine mustard, seasoning, cracker crumbs, onion, salad dressing and egg. Combine everything well. Prepare the skillet for deep frying. Put oil and heat it. Prepare the mixture into patty shapes and fry both sides until well cooked. Drain the excess oil with a paper towel.
